adaptuota pagal The healthy chef
(ąpie 10 bandelių)

2 puodeliai tarkuoto moliūgo*
1 1/4 puodelio maltų riešutų miltų
3 v.š. tirpinto sviesto/ghee
1/2 a.š. meduolinių prieskonių arba muskato riešuto miltelių
truputis druskos
1 a.š. kepimo miltelių
3 kiaušiniai

*puodelis 236 ml

Pumpkin season is in the air? Probably it is and you have tried many pumpkin recipes yet - new and tested ones. Or maybe you put your pumpkin as a decoration on the window sill and save it for later? Today I have bought mine orange friend, put it on the window sill and it will keep a company to me for a while. Until I think how to use it all. Time pressure and having no oven at home (yeah, unbelievable, right?) so I take a recipe from my archive to a day light and share it with you.

Breakfast pumpkin buns
adapted from The Healthy Chef
(about 10 buns)

2 cups grated pumpkin *
1 1/4 cup ground nut flour
3 tablespoons melted butter / ghee
1/2 tsp all spice or ground nutmeg
a little salt
1 tsp baking powder
3 eggs

* cup of 236 ml

Put spices, nuts flour, salt, baking powder, grated pumpkin and the melted butter in a bowl and mix it well.
Whisk the eggs in another bowl. Stir in pumpkin and flour mixture. Mix well again.
You can bake a bread, pouring all the pumpkin mixture into the bread tin, or can make the buns: scoop two tablespoons of the batter into your arm and form a ball. Put it on a parchment- lined baking sheet.
Bake at 170-180 Celcium degrees until for about 25-30 mins (if you making a bread, bake it for about 1 - 1 1/2 hour) or until nicely brown.
Leave to cool in an opened oven.
Cut in half and eat with a fried egg, spread with butter, nut butter, add bannana or apple slices and enjoy!

P.S. these buns are not dry as regular bread, but it will be a good substitute to gluten-full bread for breakfast or snack.
